My story is born between pots, being already the 4th generation in my family of guisanderos, with origins in the Beti Jai of Aoiz. I began training for 5 years at the San Sebastian Cooking School and continued my training and experience in different places such as Chicago, France, the '92 Expo in Seville, Sant Feliu de Guixols in Girona... My world in rice dishes began at La Mar Salada, continuing with Cocotte Taberna. This entire journey has helped me fulfill a dream, to transfer my way of understanding cooking into a physical space, where with effort I have created "Martín's Spoon" which has different areas to enjoy our cuisine.
