Valdés takes its name from the Patagonian Peninsula, where its owners Mauro and Ana worked as a cook and waitress respectively. With the idea of opening their own restaurant, they moved to Córdoba where Valdés' cuisine displays a menu that proposes dishes with unique flavors through options of fish, seafood, meats, homemade pastas and paellas, all options with a light touch to the Southern ports.
