Chef/Owner Keiichi Maemura chose the name Shimuja in respect to Shimazu Nariakira, for his Philosophy, Intelligence, and being wise. His focus is to give people out of Japan an opportunity to eat Tonkotsu Ramen made with soy sauce, which is the taste of home in Kagoshima.Kagoshima Special is a Ramen created by Chef/ Owner Kei-san himself. Extra chashu and a whole egg float at the base of this large bowl of ramen, and in the center there is a generous portion of mixed steamed vegetables. Topping the entire bowl off is a large pinch of our fried burdock root, a labor of love that adds a textural contrast and an earthy flavor to the soup. The burdock is piled in a way that is representative of the volcano on Kagoshima which is still active to this day.Shimuja is known for its cozy atmosphere, selected by SunSentinel Travel & Life as one of the 18th best dishes in all of South Florida.
