Pinpilinpausha, which means “butterfly” in Basque, was founded in 1940 by the Sanz-Raab family, gastronomic entrepreneurs from Spain. Located for more than 50 years in Santiago Centro, the restaurant received intellectuals of the time, poets, friends, business people and families who came to celebrate the pleasures of good food. It is currently located in the El Golf neighborhood, the city's new financial center. To this day, the restaurant is attended and managed by its owners, together with a team that has accompanied them for more than three generations, maintaining its essence and tradition. Pinpilinpausha is characterized by its typical Iberian dishes; such as paella, San Sebastian sea bass, chickpeas with shrimp, pata negra hams, the inevitable Spanish omelette, among other preparations, distinguished by the best and freshest products from the land and sea of Chile. Endless preparations can be accompanied by the best strains of local wines, which are selected and recommended case by case by their sommeliers. The tradition of going to Pinpilinpausha starts from a very young age, when on cold winter afternoons, the dining rooms receive the energy of the children, who come to enjoy the classic churros with chocolate with their grandparents. Always renewing itself and adjusting to the needs of its guests, the restaurant is challenged to create more options for its vegetarian customers every day. With its 77 years old, Pinpilinpausha awaits you with its arms wide open to offer an experience of authentic flavors accompanied by a loving and family service.
