A tribute to the figure of Emilia Cabrera, wife of Manolo Mayo, and the person who was in charge of his kitchen for so many years. Emilia was in charge of teaching Loli Rincón and María Ángeles Duque, her daughters-in-law, how to cook, in charge of following in her footsteps and also responsible for the growth of the restaurant. Doña Emilia's cuisine will maintain, as it could not be otherwise, the characteristic seal of the Manolo Mayo Group: top quality raw materials, seasonal and local products and a preparation and technique that does not mask the true protagonist of the dish. A more casual style than that of Manolo Mayo Los Palacios and Mayo Reyes Católicos, but equally recognizable. At the head of the kitchen will be Antonio Yerga, Mayo chef and Loli Rincón's trusted person, with whom he trained side by side.
