"It's all about the perfect balance. And that gets back to the essence of good Italian food: quality ingredients, very few, in perfect balance." Other examples include his St. Louis-style, thin-crust pizza, best compared to a flat-bread.

    Chef Eric Brenner's monthly tasting menu: For November, we visit France in honor of the recently-completed Olympic and Paralympic Games. (Red Gravy is located next door to the USA Committees' headquarters!)
