    Chef Norihito Endo, the sushi master behind Ebisu Endo, 2nd generation sushi craftsman in his family, recognized for his dedication to Edomae-style sushi. Trained under master sushi chef Takashi Saito of the three-Michelin-starred Sushi Saito, Endo brings both tradition and innovation to his craft. he opened his own restaurant, Ebisu Endo, in 2019. Endo focuses on sourcing the highest-quality seasonal ingredients from Toyosu Fish Market and uses meticulous techniques. He believes in continuous improvement, striving for perfection with every dish, and emphasizes the importance of the chef-diner connection.
