    Affinity Fish - Early Fall Udon

    The Crisp weather and colourful leaves are upon us, that means that we are thinking about warm miso soup, mushrooms, squash, spawning fish full of roe, and of course pumpkin pie or rather kabocha pie!this time of year is among one of our favourites to cook in at Affinity Fish. We find that a lot of the ingredients available during fall in Ontario lend themselves well to working with the flavours of japan. Some highlights for this menu will be hot smoke lake trout “Bitter Ballen” (inspired by Andy’s recent trip to the Netherlands) with Japanese mustard, butternut squash dengaku, egg yolk udon “carbonara” with pickerel karasumi, and red miso kabocha pumpkin pie for dessert.     Affinity Fish - Autumn Sashimi Moriawase

    For the month of November we will be bringing back our Sashimi Moriawase menu. This time of year is always one of our favourites to cook in. Access to Wild foraged Mushrooms, Delicious squash and crisp apples. Highlights for this menu will include steamed silken tofu with tare, ginger and scallion. Whitefish quenelle de brochet with a white miso crayfish sauce. Assorted sashimi for the main course with fish hailing from our Great Lakes as well as our east and west coasts.     Affinity Fish - September Kappo Kaiseki

    For the latter half of September we will be doing our “Kappo” or Counter style kaiseki menu. This 7 course menu will be packed with delights coming from the fruits of last bits of summer. Clearwater farms zucchini dengaku, Georgian Bay whitefish Tenpura with a kalamansi ponzu dipping sauce, B.C. Octopus takiawase, last of summers tomato Somen, and for the rice course we will be doing a beautiful Rainbow trout fingerling Gohan.     Affinity Fish - Wild Mushroom Harvest, Wild Caught Fish

    For our higher end menu offering in the month of October we have decided to bring back our Wild foraged Mushroom and Wild Caught Fish Menu that we did last year. This time of year is so exciting with the fall run happening in the Great Lakes bringing us things like plump lake trout roe and sujiko, in the east coast (Nova Scotia) we have swordfish season in full swing, and in the west coast (British Colombia) we have our beautiful matsutake (pine) mushrooms popping up in the abundant pine forests. highlights for this menu will include: Matt’s agedashi tofu with fried mushrooms, swordfish “ham” kinutamaki, and Zosui (Japanese risotto) with wild mushrooms and Gruyère. We are super excited to be seeing some more influence on our menus from the whole team including Andy!We’re pretty excited for this one so don’t wait!     Affinity Fish - Autumn Canadian Omakase

    For November we will be bringing back one of our crowd favourites: Sushi Omakase.we have really enjoyed working and making sushi with our new access to some saltwater species like our Haida Gwaii Albacore tuna, and Nova Scotia swordfish but be sure to expect plenty of lake fish featured on the menu.For this menu highlights will include: Grand Bend pickerel cheek and gingko nut  chawanmushi, wild mushroom and pine nut shira ae. Sushi will include pacific octopus, freshwater drum, Lingkimo (of course), and an optional supplemental piece: Binchotan seared swordfish O-toro.
