The Singh family: when the love of cooking passes from parents to children We are proud to have spent more than half a century spreading the richness of Indian cuisine and, especially, the recipes from the north of the country. Our grandfather, Mancha Singh, was a cook in the Indian Army, where he served for many years, and is the founder of a saga that we hope will continue. Mancha's son, Sukhwinder Singh, followed in his footsteps until he abandoned military life in 1995 to make the leap to Europe. In London he trained with Atul Kochhar, the first Indian chef to receive a Michelin star. Based in Madrid for more than twenty years, Sukhwinder worked in the most prestigious Indian restaurants in the capital until 2019 when he decided to embark on his first solo project. This is how Doli was born, where he captured all the experience acquired in the past, together with his son, Sunny Singh, head of the room and his right hand in the kitchen.
