    Special Dinner with the Sake brewer - Koedo Kagamiyama

    Sushi Gaga proudly presents an extraordinary Brewer's Dinner, welcoming the President of Koedo Kagamiyama Brewery.Koedo Kagamiyama Sake Brewery is a historical brewery from Kawagoe, Saitama. Originally founded in 1875 as Kagamiyama Sake Brewery, it faced closure in 2000 due to a lack of successors. However, in 2007, a group of passionate young individuals revived the brewery, bringing back its rich traditions and the only sake brewery in Kawagoe today. Nestled in the Musashino region, Kawagoe is renowned for its sake brewing, thanks to its pristine, soft, and mellow subterranean waters flowing from the Chichibu mountain range. These waters, along with the region's fertile rice fields, create the perfect conditions for crafting sake with a delicate, refined flavor.Join us at Sushi Gaga for an unforgettable evening to appreciate the flavors of Kawagoe sake, shared by President Igarashi. Therefore, we encourage our guests to arrive by 5:50 PM. Entire experience is usually 2.5 ~ 3 hours.Due to limited capacity per night and pre-ordering of fresh seafood from Japan, any cancellations, rescheduling, or reduction in party size within 48 hours of the reservation will result in forfeiture of the full deposit.     Sushi Gaga proudly presents an exclusive Brewer's Dinner, welcoming the renowned sake brew master from Shirataki Brewery in Niigata, Japan.The Brewer's Dinner offers a rare opportunity to indulge in an exquisite culinary journey curated by our talented Chef Shinnosuke Otsuka, complemented by the expertise of the esteemed Sake Brew Master Takaki Matsumoto.Niigata Perfercture is known for its rich sake brewing tradition and produces some of the most exceptional sake varieties in Japan. During the course of the dinner, Mr. Matsumoto will share his insights into the intricate process of sake production, the regional nuances of Niigata sake breweries, and the harmonious relationship between Niigata sake and gastronomy.This special Brewer's Dinner will feature an impressive lineup from Shirataki Brewery, including the distinguished Jozen brand and their special Fall seasonal sake. In addtion, Mr. Matsumoto will introduce Shirataki Brewery's finest Junmai Daiginjo, polished to an astonishing 25%, and the debut of the new SEVEN series.
