The tour aims to highlight the power of culture in cuisine, sparking conversations that celebrate diversity and the shared human experience.About This Stop:For this stop of the tour, Chef Eros will head to Leña at New York's Mercado Little Spain where he will collaborate with Chef Nicolás (Nico) López, who oversees all culinary operations at Mercado Little Spain, Chef José Andrés’s first outpost in New York City. Prior to Mercado Little Spain’s opening, Nico spent two years as one of the primary chefs helping develop the concept and its more than 1,000 recipes. He played an important role training more than 100 chefs on proper Spanish techniques. The tour aims to highlight the power of culture in cuisine, sparking conversations that celebrate diversity and the shared human experience.About This Stop:For this stop of the tour, Chef Eros will head to New Orleans, LA for a collaboration with chef Serigne Mbaye of Dakar NOLA, the 2024 James Beard Foundation award winner in the Best New Restaurant Category. Like the cuisines of the two coastal cities from which it takes its name, Dakar NOLA’s tasting menu is inspired by Chef Serigne Mbaye’s most cherished memories of his childhood in Senegal, where he learned to cook at his mother’s knee. He has worked at various restaurants featuring Japanese, Cuban, French, and Creole cuisines in the years since. These experiences have led him to discover flavor combinations he previously had never imagined. But he remains focused on Senegalese cuisine and the myriad of possibilities available using that rich tradition as a culinary foundation. Born in Harlem, raised in Dakar and at home in New Orleans, Chef Serigne has cooked at Commander’s Palace, Atelier Crenn and Atelier Joel Robuchon. In 2021, he was named Eater NOLA Chef of the Year.
