    The Art of Blending

A FLIGHT OF EXQUISITE WHITE WINESIn a world often enamored with the “purity” of single-variety and single-vineyard wines, we stand as passionate advocates for the art of blending. We believe that true excellence lies not in singularity, but in the harmony of diverse elements. Always in search of the highest possible answer, we allow vineyards, varieties, and even regions to comingle. This freedom lets disparate elements discover their own natural harmonies, unburdened by preconceived notions. Again and again, we find that different barrels, when blended with others, contribute unique notes—body, acidity, florality, savoriness, nose, backbone... Together, they form a harmonious composition that is greater than the sum of its parts. We invite you to experience this firsthand with a curated flight of some of the most exquisite white wine blends from around the world. These wines, the inspiration behind our latest project, the Glories, exemplify the profound beauty and complexity that only a blend can achieve. We submit these wines as evidence: a choir, when in harmony, can be just as breathtaking as any solo performance. Better, not More | The Wines of Roberto Voerzio

A STUDY IN RESTRAINT AND OPULENCEIn life, as in wine, we believe firmly in the philosophy of better, not more. We would rather have one perfect pair of handmade boots that we wear into the ground than a hundred produced en masse; would rather drink one exquisite bottle with dinner than pull five forgettable corks. So it should come as no surprise that as a rule, we are all devoted to the work of Roberto Voerzio, one of the truest champions of this idea. The blade of the shears of Barolo's modernist winemaking movement, his cadre is known for the practice of ‘green harvesting,’ where unripe fruit is dropped to the ground in order to drive more energy to the remaining fruit. While shocking to the more economical farmers nearby, the result is hard to argue with.Voerzio has some of the lowest yields in the region. The resulting bottles, infinitesimal in quantity, are some of the most exciting in Piedmont: intense, high-toned, and wildly profound.Join us at our table for a rare opportunity explore his wines through different crus and vintages, and to see his influence in the bottles of Roberto’s cousin, Alberto Voerzio, and protegee, Cesare Bussolo.Wines are served with a soigné selection of seasonal snacks from Antica Terra Chef, Timothy Wastell.
