Started by husband and wife, Bjorn and Megan, Aubergine finds the balance between approachable and thought-provoking dining experiences that provide space for curiosity and human connectivity to flourish. The food is inspired by Bjorn's background in Lyonnaise cuisine, with influence from our time spent in Montreal, the West Coast and Minnesota.

Join us for our first pop up in the Twin Cities. Our lovely friends at Bûcheron are allowing us to take over their kitchen and dining room to bring you a special service by Aubergine. Bjorn will be using this time of year to highlight some of the last summer produce with a touch of fall, in addition to some of the relationships he's built with local farmers. Megan and the service team have a curated wine and beverage list focusing on the classics. We look forward to welcoming you to Aubergine.
